Does anyone know how you can change the first day of the calendar to be Monday

Did you try to set a language using #PlistExtra (CFBundleLocalizations or CFBundleDevelopmentRegion) ?

You can use AnotherDatePicker from XUI Views. It supports changing the first day of week.
