Hello,
how to create new file on SD card to log data, and also how to delete it.

SD.OpenReadWrite will create a file. SD.Remove will delete the file.

one more question please,
does the new version support long file names, and folders/sub folders i.e. open "/folder/users/user.dat"

Folders are supported. The underlying Arduino library doesn't support long names.
