Does someone know what is the best practice to run an app in kioski mode (by kioski mode I mean an application where the user is limited to do whatever the program was designed to and block the commom user from exiting the software without adm permission)

sorry for not agreeing with you, but if your modified files android settings (you must be root, of course), you can assign these buttons the value you want, even turn them off if you want .... Obviously this is strictly for programmers, no level user .... but nothing is impossible, just more difficult.
Sorry for mi english..... saludos desde argentina!

See Kiosk tutorial.
Kiosk-applications are not really possible. There is no chance to block the user from using the homebutton and kill a app or go to systemsettings.
This is a very old APP and still up to date, which means the feature is available even on older versions of android: http://www.42gears.com/surelock/
There are also many apps for Android to provide device lock feature which also disables home button specially for kids like kidspalace.
