I got the opportunity to explore Zapier today for workflows. What we do here is create an app that enables us to store our email collection.
The email collection will contain just a name and email address of the person. This email collection will be stored as a list on a Google Sheet. We will capture in our app the email and name of the person and we will use a Zapier webhook to add the new contact details to the Google Sheet.

You can open both the demo and the google sheet, enter your test email and then see it added to the google sheet.

Each time a name is added, a hook is called via Zapier and the google sheet is updated.

We can also have a table to list our email collection
