By opening the apk file with Winrar (for example) user can extract my apk package files.
1. Can he analysis the apk file to extract the application name and the package name, and how to do this?
2. Is there a way to protect my apk file from extraction?

What are you trying to do? The APK is signed. You cannot change anything inside without resigning it.
